Cooper: The hotel opened its doors 20 years ago alongside this complex, aiming to offer a dynamic lifestyle destination aligned with Roppongi Hills’ vision. With 10 restaurants and bars covering Japanese and international cuisine, we aim to be part of the neighborhood, offering a diverse culinary experience. We also organize seasonal activities and unique partnerships, such as our collaboration with world-famous artist Takashi Murakami, to complement our dining offerings. Our dedicated team, timeless service, and commitment to staying abreast of trends contribute to our ongoing success, keeping us fully booked even after two decades.

Dining is a standout feature of the Grand Hyatt. Can you give us a few examples of what you offer?

We take pride in offering 10 distinct dining experiences, emphasizing seasonality and local produce. For instance, our Japanese restaurant, Shunbou, sources rice from Kurosawa Farm in Yamagata. Additionally, Keyakizaka showcases locally sourced ingredients, such as our unique Keyakizaka beef. The cattle are raised on a superfood feed designed by our chef de cuisine, which includes quinoa, cacao and blueberries, for a unique flavour that can only be experienced at our restaurant. Our head pastry chef, Chef Goto, has also received the Medal with Yellow Ribbon from the Japanese Emperor for his services to the pastry industry. Overall, each restaurant has its unique offerings, ensuring a diverse and memorable culinary journey.

Our spa and fitness center provide a tranquil escape, featuring a pool, hot tub, gym, and Japanese-inspired treatments. Designed as an urban oasis, the space offers a calming ambiance away from the bustle of the city. Our masseuses incorporate Japanese massage techniques and Zen principles, ensuring a holistic experience for guests. Additionally, our collaboration with the Mori Art Museum and over 200 curated art pieces within the hotel enhance the overall ambiance, creating a truly immersive experience.
